UHT processing eliminates the potential for harmful bacteria to grow in the milk, allowing it to be stored for a longer period of time. UHT (ultra-high temperatures) or HTST (high temperature, short time) are used to pasteurize the milk found in tetra packs (high-temperature short time). Here, the milk is heated for just the right amount of time at the correct temperature, cooled down as quickly as possible, and then packaged in tetra paks. Many Indians continue to consume raw cow's milk because they consider it to be the healthiest option. This practice dates back hundreds of years. Raw milk is now often understood to be milk delivered fresh to home from a nearby dairy.
