Ingredients
15 cups milk
5 tbsp lemon juice
2/3 cup milk powder
1 1/4 cups powdered sugar
20 to 25 almonds (badam)
20 to 25 pistachios
1 1/4 cups pure ghee
3 3/4 tsp cardamom (elaichi) powder
5 to 7 1/2 edible silver leaf (vark)
Method
1. Heat milk and when it comes a boil add lemon juice to curdle it.
2. Cool slightly,
3. Drain away the whey and tie up the solids in a muslin cloth.
4. Hang the cloth for two to three hours so that all the excess water drains away.
5. Untie the muslin cloth and knead the paneer well with the milk powder and sugar.
6. Blanch almonds and pistachios in one cup of hot water for five minutes. drain, peel and chop them roughly.
7. Heat ghee in a heavy pan and add the paneer mixture. fry over very low heat, stirring continuously, until the ghee separates.
8. Take off the heat and add green cardamom powder. mix well and set aside to cool slightly.
9. Knead again to a smooth blend.
10. Shape into a flat cake and let it cool completely. sprinkle with chopped pistachios and almonds.
11. Cut into squares and decorate with silver foil.
12. Serve.
