Allin present gets broken down on contact with enzyme alliinase to produce sulphur containing compound allicin. This being unstable, breaks down to strong smelling simpler sulphur compounds, diallyl disulphide and other disulphides. A nature's wonder drug, garlic has a long list of health benefits.
