The name "white tea" derives from the fine silvery-white hairs on the unopened buds of the tea plant, which gives the plant a whitish appearance. It is harvested primarily in China, mostly in the Fujian province, may refer to one of several styles of tea which generally made from new growth buds and young leaves of the plant Camellia sinensis. The leaves and buds are allowed to wither and dry in natural sun. Therefore the tea retains high concentrations of catechins which are present in fresh tea leaves.
