Coriandrum sativum or Coriander which is referred as Shania in India belongs to the Umbelliferae or carrot family. The coriander plant is used both a herb and spice. The procured seeds of this plant is used to produce curry powder, seasonings and sausges. The coriander is used as essential ingredient of various food flavoring agent which is required for prepring bakery items, meat based products, soda and syrup. India is the largest producer, consumer and exporter of coriander in the world with 3 lakh tonnes average production per year. This production rate differs between years and it ranges from below 2 lakh tonnes to more than 4 lakh tonnes in the present decade. Rajasthan and Madhya Pradesh are th leading producers of coriander. The other Indian states in the list of coriander producers include Andhra Pradesh, Assam, Gujarat, Karnataka, Orissa and Tamil Nadu.
