Vegetable Stew

                             VEG   STEW              Ingredients                   1 tsp. olive oil          1 green chili          1 onion (diced)          1 tbsp. salt          1 tbsp. curry powder          1 tsp. Brown sugar          1 in ginger (piece, peeled and grated, about 1 tablespoon)          3 garlic cloves (minced)          2 cups vegetable broth          teaspoon of pepper          1 green bell pepper (diced)          1 red bell pepper (diced)          1 cauliflower (medium head of, cut into bite-sized florets)          carrot  diced          8-10 France beans diced          1 diced tomatoes (with their juices)          1 cup chopped spinach OPTIONAL          1/2 cup curd   Bottom of Form Preparation 1.     Add oil and saute onions, garlic, chilies, carrots and all the vegetables except bell peppers and spinach. 2.     After 2-3 minutes. add all the seasonings and curd , keep stirring till the curd boils . Add the vegetable stock and spinach and bell peppers. 3.     Cover and let it cook for 5 minutes. 4.     Serve hot.
